Make her some soup or stew with a lot of vegetables nd puree it in the blender.

Ask her Dr. if she can have a swallow study done along with a video. This is done by a speech pathologist, they will see what degree of difficulty there is with swallowing, what consistency the food should be and teach you/ her techniques used for more efficient swallowing.
I agree about the swallow eval and remember to keep foods moist and very tender. Soups and stew are great options. Protein shakes are also good.
She has no diet restrictions. She eats slowly.
I think stews/soups etc with vegetable pieces diced small but left whole. Not everything liquidised to pulp. The diet becomes boring and uninteresting after a while. Barley cooked in soups is a good lubricant with other vegetables.
Vegetables like peas or beans are best mashed and sieved because of tough skins getting lodged in the throat.
Fruit smoothies etc are good as are the good old fashioned Jellies, Blancmange, and milk puddings.
well cooked diced vegetables can be set in an egg custard like a quiche without the pastry.
Meat such as chicken/well cooked Beef can be chopped fine and mixed in a sauce, or even a savoury jelly. A little inspiriation in the preperation of the food and presentation, should make eating easier by getting the mouth juices flowing. Good mastication of food is important, and flavour also. Blandness causes no flow of saliva, whereas good flavours promote it. Often, and if allowed, or Occasionally, a tiny glass of dry/medium sherry before meals promotes an appetite.
