My mistake, I meant chitin. Chitosan is a polymer obtained by the deacetylation of chitin.

Yes, the dietary supplement version (several brands) says, "Chitosan..... from shellfish" on the back of the jar or bag.

One assumes that a product sold by the supplements industry is meant for human consumption, but sometimes I do wonder.
