Get some heat resistant gloves that go up to your elbows Lakeland do them. Also have a look at a perching stool may give you a bit of stability.

howabout an oven that goes on the worktop? so you wouldn't have to bend down or carry hot trays etc across the kitchen, you could, if you placed a heat proof mat in front of the oven, just slide trays out....
