I love pancakes and see pancakes as fast and wholesome for those like me who are gluten intolerant.

My favourite topping is freshly squeezed lemon juice with a little sugar or maple syrup but I do like pancakes with fruit and have savoury ones sometimes. πŸ‹

Hey this sounds a shame to me as we are worth making the effort for. As how long does it take to make a batter... less than a minute.

I bake my own gluten free bread so see pancakes as quick and easy alternatives.

An option could be to prepare double amount of batter and keep it in the fridge for a couple of days. Oh, don’t give up!

You can scale the recipe up or down.

I've also cooked a lasagne that used pancakes instead of lasagne sheets (you can barely tell the difference), so if you do have any leftover pancakes, you could use them to make a savoury dish for dinner the following day :)

Pancakes freeze really well - I always keep a few in the freezer - layered with greaseproof paper. I love pancakes with lime juice and maple syrup. Much too yummy to only have once a year!

Hi there INK45 you could try gram flour as thats often used as a plant based egg alternative or there's Orgran egg replacer made with plant cellulose. orgran.com/products/no-egg-...

I mix 1 tablespoon of chia with 3 tablespoons of water as a replacement for an egg. I don't mind seeing the whole chia seeds in my pancakes, but if serving to someone who does mind, I grind them first in a mini blender.

I don't eat wheat beccause it causes an insulin spike which causes health problems just like the sugar most people put on their pankakes. I thought that this group was about healthy eating?

The thing is Eryl there is a lot of difference between healthy whole grains and simple sugar. Complex carbs are packed wit nutrition and are slower to release than simple sugars which have NO nutritional value.

Not all of us need an unbalanced diet to compensate as we have put our bodies in danger because we’ve lost control of our weight.

We support a healthy diet for us and our needs and the majority of us except each other’s needs and respect each other’s dietary needs.

It depends, varies from person to person. Rice and potatoes spike my blood sugar but wholewheat doesn’t, possibly because I always have it with a fat source. I don’t put sugar on pancakes.

Hi Elisabeth3 your pancakes sound lovely as I love home made jam which I’d have with cream cheese.

Pancakes with lemon juice are plain unsweetened pancakes folded up with a sprinkling of sugar then fresh lemon juice on top and it’s lovely.

All my childhood memories of pancakes are of pancakes served like this. 😊

I think pancakes with lemon juice and sugar is a British thing. I grew up in the USA where maple syrup and butter were standard.

Gorgeous. If you fold spinach (from the blender) to the dough, it looks really healthy from the green colour.

We always had lemon juice and sugar when I was growing up, so that's my plan. These days it's less sugar, more lemon juice than when I was a kid!

I'll also have a few with just raspberries and cream :)

You can't beat lemon juice and sugar and I use much less sugar than when I was a child. Also raspberries nows that another great choice. πŸ‘

I enjoy my pancake with berries when they are in season. When the berries are not in season I have it with a banana on its own or sometimes for a little treat I add a little bit of maple syrup on top of the banana.I must remember to have it with yoghurt sometime though I bet it is lovely.

the most common thing I put on pancakes is real butter - and rarely anything else. But sometimes if there is real maple syrup around I'll dip my pancakes into that (don't like to drown them in syrup)
