Hey guys, a lot of people have been asking me to share recipes that I use. I thought I’d create this thread and we can all share our favorites. For those that have been waiting, sorry it’s taken me so long, this week was crazy. Just a heads up, I know a lot of us on here probably eat different things and have different dietary needs. These recipes are healthy for me with my current liver state and most likely are for you too, but if not you can always change things up. 😁

CASHEW-CRUSTED CHICKEN (the closest I can get to chicken nuggets) (CAN ALSO MAKE WITH WALNUTS OR ALMONDS)

PREP: 15 minutes

COOK: 15 minutes

WHAT YOU NEED:

Extra-virgin olive oil

1 large egg (can use only egg whites)

1/2 cup almond flour (any flour works)

1/2 cup finely chopped raw cashews (we’ve made it with almonds and walnuts and it was just as good)

1/2 teaspoon salt (I leave this out, only including for those of you who can have it or just do it anyway.)

1/2 teaspoon black pepper (again, I leave it out, but if you want it it’s in the original recipe.)

6 boneless, skinless chicken breast tenderloins (about 12 ounces total)

Preheat the oven to 425 degrees F. Lightly brush olive oil on medium baking sheet.

Whisk together egg and 1 tablespoon olive oil in a shallow dish. In another shallow dish, stir together the flour, cashews, salt, and pepper. Dip each tenderloin into the egg, turning to coat. Allow the excess to drip off, then dip into the cashew mixture, turning to coat. Place on the prepared pan.

Bake the chicken, turning once halfway through cooking, until the internal temperature is 165 degrees F and the chicken is no longer pink, 15-18 minutes.

Just a tip, to toast your cashews just heat them in a dry skillet over medium heat, stirring, until fragrant and lightly browned. Just takes a couple minutes.

We usually pair this meal with cauliflower mashed potatoes or broccoli.

Again, I know this recipe might not work for everyone and some people try to eat a plant based only diet. For those that do still eat meat sometimes, this is my favorite. I’m going to add more recipes into this thread throughout the day and will try to find something for everyone.

SEARED SALMON FILLETS WITH GINGER-CARMELIZED PINEAPPLE

PREP: 5 minutes

COOK: 15 minutes

WHAT YOU NEED:

2 tablespoons ghee (or whatever you prefer)

4 pineapple rings, halved

1 teaspoon freshly minced ginger

1/2 teaspoon black or white sesame seeds

4 skin on salmon fillets (5 to 6 ounces each)

1/2 teaspoon salt (optional)

1/4 teaspoon black pepper (optional)

1 tablespoon coconut oil

Chopped green onion

In a large nonstick skillet, heat the ghee over medium-high heat. Add the pineapple, ginger, and sesame seeds and cook, turning once, until the pineapple is golden, 6 to 8 minutes. Transfer to a plate and cover to keep warm. Carefully wipe out the skillet. Sprinkle the salmon with the salt and pepper if using. Heat the same pan over medium heat until very hot. Add the coconut oil and heat until you see ripples across the surface. Place the salmon in the skillet, skin side down. Cook, without touching, until the salmon has cooked about three-fourths of the way up the fillets, 4 to 5 minutes. Using a spatula, carefully turn the salmon over. Cook until the salmon just barely starts to flake when pulled apart with two forks, 2 to 3 minutes longer.

Just a tip for the best results. Remove the salmon from the fridge about 15 minutes before cooking so they can come to room temperature. Most of the cooking of the salmon will take place while the salmon is skin-side down in the pan. The color of the fillet will begin to lighten as it cooks, starting at the bottom and moving upward.
