So, it’s not technically soup more a curry, but as I ate mine with a spoon this evening, I reckon it can sneak in as an entry for the soup off 🍜
Fry an onion in oil for a few minutes then add 3 dried red chilli peppers. Continue to fry until onions are starting to brown. Add a cup of red split lentils and a jug of stock (about 3 cups). Add 2 tsp turmeric and pinch of salt. Simmer for 10 mins. Add chopped garlic and chopped fresh ginger and a handful of spinach. Stir and simmer for another 5 mins.

Dal with spinach, one of my favourites. I also like it made with chana dal (split chickpea) instead of the red lentils but that does take a good bit longer to cook so I usually do that in the pressure cooker. I also add some mustard seeds and cumin seeds with the onion. Not much water, it's a curry, more water it's soup. Always tasty though
