I am currently trying to lose weight by cycling 16 mile trip round my village twice a day. App says I'm burning 960ish calories per trip. How much calories do I need to take in for weight loss? I have read about the starvation mode the body goes into if not getting enough. I have porridge, salad and veg for my meals but don't think it's enough as my weight has stopped coming off and I'm gaining instead.

Whilst exercise is excellent for health and well-being, it shouldn't be relied on for weight loss, that will be more about how well you're eating.
If you don't expect to be living the rest of your life eating porridge, salad and veg, then it's unrealistic and unsustainable to just be eating that now. If you intend counting calories, then you should get a personal allowance, tailored to your specific requirements from the NHS BMI calculator.
