Gluten free vegan tomato pasta bake 🍅

Here's what I made tonight it's gluten free pasta spirals with Chantenay carrots sweet peppers onions garlic mushrooms and plum tomatoes, I cooked the onions peppers mushrooms and garlic in olive oil then added a little buckwheat flour then the tomatoes and stock from the carrots.

Manicotti (stuffed with parmesian, mozzerella, and ricotta cheese, with a sauteed garlic marinara) which is wrapped in a large pasta noodle.
My lunch yesterday: Fresh Air, and a Hike - Fasted 24 hours yesterday.
Here's what I had:
1 chicken breast (rotisserie style)
1 large zucchini steamed with cheddar cheese melted over it
1 cup of quinoa with red & green bell peppers, garlic and olive oil
Fresh lemon to squeeze over it, and Fenedeni sauce (soy, vinegar, lemon, onion, thai chili peppers) to dip the chicken

Here's what I made for tonight and its cooked quinoa and red lentils with sweet peppers garlic and onion cooked in olive oil to soften then add some gram flour added some enough water so that it was dough like, I put it in a baking dish and topped with sliced onion chopped baby tomatoes

Here's a casserole I made with onions garlic tomatoes sweet peppers chestnut mushrooms Chantenay carrots black beans lentils and quinoa in a peanut butter sauce, with cumin ginger turmeric and black pepper.

This is delicious with a barbecue a side dish or just on toast 😋
I half tomatoes and spread some crushed garlic, (you could use garlic salt or granules) black pepper, Italian dried herbs and olive oil on top.
🥕 Carrot fritters 🥕
They are made of carrot, garlic, onion, chilli, lemon, fresh parsley and ginger. I also grated in some creamed coconut from a block.
You have got to stay on the ball!
However, last night went out for a meal with my family and almost without thinking ate garlic bread and deep fried onion rings!
It was almost an unconscious act - scary! Has anyone else done this?
This morning I feel all bloated and a bit rubbish and of course disappointed in myself.
