I completed week 2 today. It went well and I ran on a harder route than previous, even partly joining a Parkrun! . However, I find that increasing intensity gives me a slight headache and this happened during week 1 but disappeared. Hopefully, this will permanently go when fitness improves.

Well done.
As a new runner trying to build stamina, strength and injury resistance, there is no need to increase intensity.
Slowing down to the recommended easy conversational pace makes it more achievable and for most, more enjoyable.
Counterintuitively, it is easy conversational pace running that builds your stamina and endurance, not fast running.
Say this sentence out loud to yourself "Am I going slow enough to enable me to speak this sentence in one out breath?" If you cannot, you are going too fast.
