How to make sourdough

I haven't got any excuses now re making sourdough bread, I'll share the successful recipes.

I won't be making too many as I'll end up with more starters waiting to be used in my fridge than I know what to do with.πŸ˜‚

Oh I'll be sharing those. Overhead the forward and part of the introduction today, there are so many ancient flours you can use.πŸ˜‹πŸž

Its all about taking time. 3 days to feed and get the starter going. Overnight for the first rise in a coolish place. Then two more rises each one slow.

At least 15 minutes kneading but I use a machine for the first 10.

Help with this Buckwheat Sourdough bread recipe

2 recipes from the same website ...

they mention how to make the sourdough and in another website how to make bread.

Just a bit lost, I like the recipe as it has only a few ingredients and uses apple cider vinegar and buckwheat groats

My question is how does one incorporate the sourdough into the bread recipe and how much. I will test it with only 1/2 cup groats as i have made many breads with sourdough and they were all flat.

Hi there

Personally I dislike the one with Buckwheat groats so make one with Spelt flour which is an ancient grain and more tolerable for those with IBS as it has less fructans.

The recipe I use is from the Dove's Farm website and works. Just a tip, I've made quite a bit of sourdough before and it doesn't rise as high as normal bread.

Thank you crazyfitness i tries another recipe with spelt flour.

Am not sure if spelt is gluten free but i still tried it. - no luck the recipe seemed easy but it did not have any bubbles....

I also tried another recipe with Spelt flour and it didn't work. I then had a look at the Dove's Farm website and found that one which works for me.

You need to ensure that the starter, ferment and dough are kept quite warm, I put them above my heater on a window sill, I have night storage heaters so they're on all the time.

Spelt flour isn't gluten free but it has less fructans so those with IBS are more likely to tolerate it. I'm making some more ferment today ready for the dough and going to add some seeds this time.

You are welcome and that's what I did, I kept trying.

I've made loads of sourdough with normal wheat flour but had to change as I had a bad bout of food poisoning back in November 2018 and my gut no longer tolerated 'normal' wheat flour.

You will get there.
