Nut Roast

This Nut Roast is absolutely gorgeous. I have made it ready for Christmas but it was all I could do not to pick at it. The taste is just like a lovely herb stuffing.

I cheated for lunch and had a BOL Keralan Coconut Curry which I bought last week and it was delicious. Tonight I am also cheating by having some pizza, I very rarely have pizza but found a Goodfella's Vegan one with Falafel, the picture on the front of the box does look rather yummy. I will team the pizza with some long stemmed broccoli and other veg to balance out the meal.

Hi Alicia and clever you, this looks totally delicious and its healthy.

I think that you've got will power so don't think its cheating having a coconut curry and enjoy your pizza tonight, I love falafels and keep a stock in my freezer. 😀

That pot of curry was just the right amount and delicious, I'd recommend them to anyone. I'm looking forward to the pizza and I also love falafels and a good idea to keep a stock in the freezer. I need to use some things out of the freezer so we have room - think I may have overdone it on the one pot meals. ;)

That looks lovely, how delicious. I have seen the Goodfellows Vegan Pizza - it does look really nice. I've just cut it into 4 and put it in the freezer of course some fell off and I just had to eat it🤪, oh boy it tastes delicious.

Well mine certainly isn't healthy but that Hidden is incorrigible🤣🤣

It certainly was and the pizza was good as well. I enjoyed my lunch but unfortunately it didn't like me as I've had bad tummy pain all evening. At least I know not to buy it again.

Think it was what I had at lunchtime not the pizza. It's better now than it was thank goodness.

So true Jerry e specially in the winter. I just love that vegan gluten free iced fruit cake in Costa,I have resisted it so far : )

My local Tesco stocks a vegan and GF pizza by Kirstys. Its plain so I add extra toppings but its very nice and it's soo handy to have in the freezer for times when you just don't have time to prepare something more nutritional 👍😁

Hi Jen, here is the recipe

Vegan Nut Roast

The chopped nuts in this recipe should be left in small pieces, about the size of peppercorns - don’t be tempted to mill them to a powder. If you’ve bought whole or broken nuts, either chop them (carefully!) with a large kitchen knife or put them in a bag and bash them with a rolling pin to get them down to size. This give the nut roast a lovely crunchy, crumbly texture.

Serves 3-4

Ingredients

• 200g (8 oz.) chopped mixed nuts

• 1 onion, chopped

• 1 green pepper, chopped

• 1 stick of celery, chopped

• 1 grated carrot

• 2oz. (50g) sliced mushrooms

• 2oz. (50g) breadcrumbs

• 25g (1 oz.) plain wholemeal flour

• 125ml (5 fl. oz.) vegetable stock

• 1 tablespoon mixed herbs

• 1 tablespoon vegetable oil

Method

1. Preheat the oven to Gas Mark 5 / 375°F / 190°C.

2. Heat the vegetable oil in a pan and fry the onion for a few minutes.

3. Add pepper, celery and mushrooms and fry for 2 minutes.

4. Add the grated carrot and fry for one more minute.

5. Remove from the heat, add the flour and stir. Add vegetable stock, nuts, breadcrumbs, mixed herbs and a little salt and pepper.

6. Grease the inside of a loaf tin. Put the mixture into the tin, pressing it down with a spoon.

7. Bake for around 35 minutes.

It's a fabulous recipe, well I think it is, so you should really enjoy it.
