I thought I’d post some of the main meals we have regularly that are quick and easy which will give any one new to or thinking of becoming vegan some ideas. If anyone would like to add some more ideas that would be great 🙂🌱 Ali
Chilli with vegetables and kidney beans, served with rice/cous cous/baked potato
Stir fry with rice/noodles/quinoa
Vegetable curry with a tomato or coconut base, add lentils/chickpeas if liked
Red lentil dhal with garlic and ground coriander, tumeric
Tagine with root vegetables, chick peas, cumin and cinnamon served with cous cous
Bolognaise sauce with carrots, mushrooms and puy lentils serve with pasta or fill into whole peppers and roast
Tofish pie, vegetables in a vegan white sauce with smoked tofu and topped with mashed potato
Shepherdless pie, bolognaise style sauce as above topped with mashed potatoes
Pasta with a sauce made from, mashed pumpkin/butternut squash/carrots or sweet potato, plant milk, nutritional yeast, mustard, turmeric, black pepper and miso paste
Rich tomato sauce served with linguini pasta
Baked sweet potato with stir fried mushrooms with black beans, spinach, cumin, garlic, chilli and fresh coriander. Topped with chopped avocado.
Vegetable pizza buy a vegan base or make one.
Vegan cauliflower cheese, baked potato with salad or vegetables
