I'm reading your previous posts with interest and I'm not going to knock what you're doing, chiefly because, it's working! I've gone gluten free as well - made a big difference, but only by going lactofree at the same time, then reintroduced dairy by drinking kefir... I believe in nourishing the gut with allies that'll help us digest and absorb all the vitamins and minerals we need..B12 is a MUST for us.
I think people are like pedigree dogs, only our pedigree is hidden and we don't always know what's good for us. Some people appear to metabolise grains and get by on modest amounts of vegetable protein, I know I can't!
I drink a red wine tonic. When I fancy a tipple apparently Yeats ago they gave it to you in hospital! My hubby likes it do I've just got it with added iron (could only find it online with added iron) and had to order 6 bottles eat a nuisance!! Good luck with your new eating plan
