Yes I would love to save the planet, but we all know the reality, we have to look after our health, so I am sticking to what I know is the very best for us hypos, in fact everybody. When I used coconut oil to fry the whole pan burst into flames. It has a low smoke point compared to other oils, and the more unrefined, the lower the smoke point, so oils would vary, but its smoke point can be as low as 350 degrees, and it is not suitable for high temperature cooking.
