I can't eat oats, but many people can
You can eat rice, buckwheat (a seed), millet (if not contraindicated for any other reason) instead of gluten/gliadin containing grains. You can get rice and buckwheat noodles, if you can't live without a pasta substitute.
Corn?
Oh yeah. Maize doesn't contain gluten. Nor does quinoa. I don't eat any processed grains, so I tend to forget. So corn on the cob is OK (i'm not keen on it, though and it does contain the prolamine ZEIN, which some people are sensitive to) .
Here's a list:
The Italians make some excellent pastas containing a combination of rice and corn and quinoa or just rice and corn or just corn. The shapes are evolving. Not cheap but.....
