A great article on gluten free

This is a really interesting article and confirms what I have found in my own research as well as my dieticians. Sadly, so much food now is labelled "gluten free" and simply uses a load of rubbish instead of gluten. A common (and cheap!) replacement is rice or rice flour which personally makes me incredibly ill and makes eating out and shopping a minefield.

He has done a lot of work for folks in USA. One good thing with the 'faddies' is there is more food I can eat!!
