Happy Thursday everyone! What have you been cooking or baking this week?
It's week 3 of social distancing for my husband and I and I feel this week has definitely taken a hit on my mental health. I'm starting to get anxious over not knowing when this will end and finding it more difficult to focus on my work sometimes.
As an outlet though, I have been baking and cooking every day. This week I will share with you Jamie Oliver's curried fish and prawn stew. I always crave comfort food when I'm feeling down and having this stew for dinner and lunch the next day was exactly what I needed. Sadie, this dish looks amazing. I have that Jamie Oliver book so I'm definitely going to give it a go. Last night I cobbled together a very simple veg curry as I'm low on ingredients at the moment, but I'm finding inspiration from Atul Kochhar's very simple curries. This is the one I plan to do next as it's so simple - potato and egg curry:

Your food looks fantastic, obviously I would not eat it because of the fish and prawns but it still looks fantastic, tasty and colorful. It must be terribly hard social distancing from your husband but have every confidence that at some point it will end. xxx
