Recently, three years after my diagnosis, after I stopped mirapexin, I switched to an effervescent formulation of levodopa called Sirio 25/100. I take half a tablet in the morning and a half after lunch (plus 1 mg of rasagiline in the evening). Why is the best time of the day in the evening from 5pm onwards? shouldn't levodopa have a constant effect?

If I am understanding the following study correctly, it sounds like patients experienced less afternoon off time which sounds similar to what you are describing? This doesn't sound like exactly the same drug as Sirio, but siro sounds like it is based on the study drug so it seems plausible that you might have similar results.
