Hiya Nate. Well, your first step would be to see your GP, he's the one to examine you & maybe take tests & from that diagnose or refer you to to a Specialist. It wouldn't be a good idea to start with supplementing with vitamins or changing your diet before seeing your GP as he needs to see you (or even take blood tests) without any changes being made & affecting your symptoms.
As I'm not over familiar with Lymes I've just done something I've never done before & entered all your symptoms into Google & it's thrown up anything from vitamin deficiency to PMT (I would hazard a guess that's not very likely!). So, not always a good idea to self-diagnose, it could scare the bejesus out of you & cause added stress so do please make your GP your first port of call. If it turns out to be autoimmune pop back on & we'll help where we can.

Have you been bitten by a tic? I was bitten by one last year and was given antibiotics for about three weeks. I suspected that I had been bitten before this and so asked for blood work to be done. It came back negative for lymes. Turned out I had inflammatory arthritis! Worth asking your doc to be checked for the disease.
