To days tea, pork fillet

Onion

Red pepper

Tin toms

Tin chick peas or any other white beans in a tin

Chicken stock cube

2 clove garlic

Ground corrinander tea spoon

Ground cumin tea spoon

Dried oregano

Few chillie flakes

Milk

One pork fillet,

S&p

Fry pork on all sides, remove from pan

Add touch oil fry chopped onion and sliced red pepper, untill soft, but not coloured

Add spices and fry couple mins

Add tin chick beans, or any pulses you prefer

Add tin toms, half fill empty can water add to mix.

Add stock cube

Put fillet on top and cook in pan with lid on approx twenty mins

Season

Take fillet out, cover tin foil,

Add touch of milk, to mix instead of cream , bring to boil couple mins,

Slice fillet, pour sauce over serve rice and green beans.

This one freezes well. I like batch cooking.

Yes am posting my daily tea food, trying to loose weight now, so healthy food as opposed to loosing weight to fast.

Meat 3 times a week

Fish twice a week

Veggie twice a week

Sticking to that

Tracey, I'm trying that recipe. It looks lovely and my OH will salivate at the combination of pork and beans which is probably his ultimate favorite thing. :)

I use pork tenderloin quite often in stir-frys, being as it is low in fat (and comparitively low in calories). I also make pork strogannoff using pork tenderloin (and half fat creme frache for the sauce). Another of OH's favorites actually.

Anyway, that recipe of yours is definitely going in my folder- thanks Tracey :)

Hi, hi feel free to add your own, just a normal mum cooking tea that's all, nothing fancy for mid week meals:)

Will try and post my meals two or three times a week ::)

Orzo, Bits if veg for tea, haddock

Using what bits of veg are in the fridge.

Courgette

Tomato

Got 1/2 aubegine

Got 1/2onion

Bit of orange pepper

Chop into largish chunks .

But use what ever veg you have I do this often with sweet corn and peppers.

Put veg on roasting tray, with couple cloves garlic olive oil, and dried herbs, I like oregano, and parsley, S&p but what ever veg you have.

Roast for about 20 mins untill just charred.

Cook orzo while veg in oven takes about 10 mins.

When veg roasted let cool slightly, chop into smaller pieces , mix with orzo

Put haddock fillet or fish that's on offer really. ( sometimes i do salmon fillet, as had an offer some where) on baking tray

Top with sliced tomatoes or bread crumb and herb mix, season cook about ten mins.

Ready to eat
