I just did a low sodium Asian blend over rice tonight, my recipe. Thought I would share. So yummy and easy but make sure you read labels. I make the rice with NO salt chicken stock and about 2 tbsp. of sesame seed oil and a tbsp. of amino sauce ( NO SOY Sauce, use coconut amino) in a separate pot. ( I.5 of water to 1.5 c of chicken or vegetable stock to 1.5 c of plain old rice) Then in a large fry pan, I sautéed sweet onion, in a bit of olive oil, and then more stock. You can add your protein now, like chicken... I use a special chicken sausage we get that has only chicken, and spices but no salt. It is made locally and there is no fat when you cook it, it so lean and good.... Then I cut up water chestnuts and baby corns. I bought canned and rinsed them a LOT but neither had a lot of sodium. ( I always rinse canned food if I use it) I add a bit more sesame oil for favor, about 2 tbs. Cook the protein through and splash in about another 1-2 tbsp. of amino sauce. I also add red pepper in season and tonight I used -green pepper. Do not over cook the pepper so add it just before the other veggies are going in. I Meanwhile, I microwaved a bag of mixed veggies. I have use other blends like carrots and broccoli but make sure that what you buy is just veggies and NO Sauce added. You can add any veggie you want and when the fresh stuff is in, I use that. Pea pods and snap peas are good if you can get them. Broccoli is great ( but hubby does not like) This is also a good use of left over veggies from another meal if they are not over cooked. I have used chicken and shrimp in this recipe or no protein and just veggies. You could add scrambled egg. Add more broth to make a bit of sauce and simmer for a short while ( maybe two minutes at the most) but do not over cook the veggies. You want them crisp. I serve it over the rice and I have made it with the rice in the pan. Then...… this is the kicker, we top the dish with sesame seeds and then a splash of sweet chili sauce to taste. Make sure it is low sodium sweet chili sauce or make your own which is another recipe and not hard to do. If you like spicy, try it with Asian siracha sauce. (too spicy for me) Oh this is so yummy and it makes a ton for left overs. If you keep sesame oil and the amino sauce and have broth in your pantry, you can whip this up in a jiffy any night. If you use carrots, make sure they are julienned and small or they will be too hard if you don't par boil them first. Cauliflower is not great in this.

The Coconut Amino is a bit expensive, but it is worth it. Sesame oil is strong and adds flavor to lots of things. Like a fav is Asian slaw. Great as a side dish or as a topper on sandwiches or over fish. Ok, I am stopping here..... Geeze I love food!

Hey, Bassetmommer ... I'm CKD4 (eGFR = 27-29). I am not vegan, but virtually all vegetarian, low protein, supplemented with am and pm essential amino acid tabs. I'm about to prepare a block of tofu. I can see why soy sauce is a no-no, but I do realize that tofu is a soy-based food. Any guidance? Thanks.

Hi Big Billy,

Soy sauce is a no no because of the sodium level which is very high. You have to become aware of what has hidden salt in it. Tofu is normally low in salt.
