CAULIFLOWER BASED PIZZA

All of the good stuff and not too much of the bad stuff and all made by my granddaughter's fair hand. We've included a picture of the base too, to give an idea of what it looks like. Ours was a family share pizza, hence all the different toppings. :)

This recipe is for a basic cheese pizza with cauliflower base, you can add any toppings you like, but don't forget to add that to your nutrition count.

Our toppings include ham, pineapple, orange pepper, sweetcorn, smoked sausage, pepperoni and anchovies, but the options are endless.

This base is not as firm as a dough based pizza, but if you cook it for long enough, it can be eaten carefully with the fingers, unless you pile too much topping on it ;)

PIZZA BASE INGREDIENTS (makes 2 large pizzas, 8 slices for each):

1 large cauliflower (I use leaves and everything)

250g grated Parmesan cheese

2 eggs

2 tbsp mixed herbs (optional)

2 tsp garlic powder (optional)

METHOD

Grate the cauliflower by hand, or in a food processor

Cook gently in a wok/large frying pan until very soft - aim to cook off as much liquid as possible

Beat the eggs and stir in the grated Parmesan cheese

Add the cauliflower and mix well

Line two pizza trays with parchment paper

Divide the cauliflower mixture between the two and squash to fit the trays, ensuring to build up the edges slightly, to form a crust.

Cook for approximately 30 mins, or until browned and firm'ish to touch on 180 deg C/160 for fan assisted ovens/gas mark 4

Remove from oven and leave to cool, then carefully slide off parchment paper onto lightly greased pizza tray.

Add toppings and return to oven until cheese has melted.

INGREDIENTS FOR SAUCE:

400g tin tomatoes tomatoes (no added sugar)

1/2 tbsp red wine vinegar

30mls extra virgin olive oil

1/4 tsp red pepper flakes

1/2 tsp onion powder

1/2 tsp garlic powder

1/2 tsp dried basil

1/2 tsp dried oregano

1/2 tsp dried parsley

salt and black pepper to taste

Blend all ingredients and spread evenly over pizza bases.

Sprinkle 250g of grated mozzarella cheese over each pizza.

NUTRITION PER SLICE:

Protein - 14g

Carbs - 5g

Fat - 11g

Calories - 182

Honestly, when it's riced, spiced and/or mixed with cheese and egg, it's not really recognisable as cauliflower :)
