Stuffed portobello mushroom with coleslaw

Hi everyone and here's a pic of tonight's tea.

Take two portobello mushrooms and butter the underside. Place the mushrooms, bottom side up, in a medium oven for about ten mins. Meanwhile, fry some chopped leek, garlic and diced courgette in a big blob of butter. When the veg has softened, turn off the pan, add a tbsp ground almonds, handful of grated cheddar and a tsp of harissa paste to give it a little kick. Pile into the 'cup' side of the mushrooms and put some grated cheese on top, before baking in oven for about 15 mins.

Coleslaw: thinly slice half a pointed sweetheart cabbage and mix with a grated carrot and half a thinly sliced apple. Mix with a dollop of mayonnaise.

Serves two.

yeah looks delish, but maybe next time skip the butter for olive oil spread or margirine (healthier?)

Hi afnhg.

I’m following low carb high/healthy fats, so the fat I eat is in its natural form eg butter contains essential fat, which is needed by the body.

I no longer eat any low fat products as they’ve invariably had sugar added. By eating a lchf diet, the sugars in everyday carbs (bread, pasta, potatoes, rice) are eliminated. It’s sugar that is making us fat, not essential fats! It goes without saying that I don’t eat biscuits, sweets etc

I usually cook with olive oil but for this recipe, I wanted the ground almonds to bind with the butter to make almost a crumble mixture.

Hehe - it took me ages to understand all the abbreviations and acronyms, too! These are a few that had me stumped:

Morning, StillConcerned - and to think that I was one of those people duped by the whole low fat con!

My favourite book on healthy lifestyle is currently 'Eat. Nourish. Glow.' by Amelia Freer (Thorsons). She trained as a nutritional therapist and saw the damage that sugar and poor eating habits do to our bodies. One of her aims is to help people see that 'instead of waiting to be fixed, we want to know how not to get broken in the first place.'

Highly recommended - some nice recipes in it, too 🌻
