My latest personal challenge: TSN, try something new.

I'm trying to make a new dish at least every second day, to see if I make a dish that is new to me in some way - an ingredient I have never had before; or a dish that I have never tasted; something I have had but never made myself; a familiar dish made with unfamiliar ingredients.

Today is my 3rd day. Previous days were a nectarine, ham and blue cheese salad; and celeriac remoulade.

I looked at the results and thought, meh, but then I took a bite, and scoffed it pretty quickly, and went back for seconds. It was only as good as the sum of it's parts, but as it's parts are pulled pork, Leicester cheese, mushroom, pepper, tomato, egg and milk, it was pretty damned good. Sort of a baked omelet. It took much longer in the oven; maybe cause my "salsa" was tinned chopped tomatoes with chilli powder. I think it upped the moisture content of the egg mix.

Lots of leftover casserole, and I will make it again. Replaces the pasta bakes I am missing.

Nice challenge! It is so good to try new things ( for the brain and also training your taste to new things). Just keep us informed. 😉

I had real trouble finding a recipe that I could make with things in my fridge yesterday, so have started a google doc. Four items on it, from things I have accidentally encountered in the last 12 hours.

I think this challenge is going to work out fine. 🤤

Meal #4: si yau gai Soy sauce chicken.

It's a Cantonese favourite of mine, that I hadn't had in a long time. I don't think I have ever made it. It's a very simple dish; the name is the recipe, nearly.

I googled different recipes, and found lots with honey and some American recipes with up to a cup of sugar. 🤯

Wiki recipes seemed to be the most authentic....

I skipped the sugar entirely.

I made a mistake in deciding it would be better if I marinated the chicken. That wasn't a disaster, it was quite tasty of course (chicken with soy and ginger 😋) but it wasn't the dish I was hoping to replicate; the chicken taste was drowned in soy sauce.

Next time I will skip that stage and put un-marinated chicken into the pan.
