Colourful meal tonight.

Hi everyone,

Just wondering what you've had or are having for your evening meal tonight?

I've had some Cajun chicken, red onions, butternut squash, brussel sprouts, red peppers and mushrooms. Very colourful and tasty. :-)

I also had a dessert of a piece of carrot cake with a scoop of vanilla ice-cream.

Very happy that it's Friday, and looking forward to the weekend!

Hi,homemade chicken korma,with stir fry sweet pepper,carrot,celery 2 tomatoe, just finished,have a good weekend 😊

Hi ary88 - wow, you've made a homemade Chicken Korma - that sounds really good! I bet that tasted delicious! Have you got a recipe for that, that you'd like to share? If so, I would love to hear it. Your stir-fry alongside sounds really tasty too.

Hi,its a cheat,roasted a chicken,then, with 3oz portion breast sliced,heated 2 tbspoon co-op korma sauce in a jar. Tthinly slice1 carrot,half sweet pepper,3 celery sticks,8 mins stir fry until cooked,1 tsp veg oil ,hslf way through frying sdd 2 lge spoon hot water (small pan for korma,wok for veg😊

I just had cheese and mushroom omelette with chips and beans at Morrisons Cafe, was nice.

Happy Friday!

We had a pasta bake with tomatoes, onions, sweetcorn, carrots and leftover pulled pork, parmesan cheese on top. Was using up leftovers as going shopping tomorrow - pasta bake is good for that! Tomorrow I'm going to pick some kale and try that crispy kale recipe of yours.

Your pasta bake sounds really really good!!! I love pasta bake - soooooo delicious, and like you said, it's great for using up leftovers.

Brilliant that you're going to try the Crispy Kale - and I hope you enjoy it as much as I did. I was really grateful to the people who suggested that way to cook it - it is really tasty.

Yes it wont be long before the courgettes start taking over the world again!! I've suddenly got lots of kale with the warm spell so perfect time to try your recipe. Have you seen the pic of romanesu broccoli on my profile? I grew that one last year - its so delicious - if you see any for sale this summer and you haven't tried it before, buy it! Its kind of nutty, really lovely flavour.

Wow! That picture of the Romanescu broccoli is BEAUTIFUL - I will certainly keep an eye out for it - and try some when I do spot it. I've not tried that kind of broccoli before. I like the thought of a nutty lovely flavour - thanks for the recommendation. :-)

You are obviously growing some amazing vegetables. :-)

I love growing my food, and I love trying out new things. I've got an allotment. This years discovery was cape gooseberries (pysallis) which are just divine. I'll be growing them again! Currently I am singing to my asparagus patch to try to wake it up out of hibernation! Do you grow anything?

I tried to grow some tomatoes, and some chillies in our greenhouse - infact we tried for 3 year's running, and each time we never got any produce as we both got bored of watering them. Not good I know, but I am thinking of trying again - and hopefully sticking with things this time. :-)

Oh no! You could try planting them in the ground outside then you don't need to water them really. I only remember to water mine if there's basically a drought!

Really! Wow, I never knew that. That's where we've been going wrong...! You have given me some hope of success. I think I'll maybe buy some tubs to grow them outside this time. :-)

Cool! Can you plant directly into the ground? Then the roots will reach down to find their own water - saving you the job. Tubs would still need watering.

Ah, I see. Thanks for explaining that. Yes, I think I could hopefully find some space to plant straight into the ground, so I will give it a go. :-)

Go for it! Hassle free is the way to go x nothing tastier than eating a homegrown tomato straight off the plant, warm from the sun.

Can I ask where you got the seeds/plugs for your broccoli last year? I ate it for the first time and loved it, would really like to grow some this year but as it's my first foray into anything more exotic than carrots, potatoes & spinach, am not really sure where to start...!

It's quite hard to find the seeds - online is easiest - King's and suttons are reliable brands. Although you plant them in march, it might take till the following March to get broccoli so don't dig them up if nothing has happened by the autumn, just give them a stick to lean on and leavethem over the winter. The first time I grew them I ddidn't know this and was really disappointed , didn't get round to digging them up, then discovered them all with wonderful heads in frosty February! They are well worth growing. Good luck

We had roasted vegetable lasagne ☺ especially good as daughter bought full fat cheese in error !!! Eeek 😮 lol

Hi Anna,

Your Roasted Vegetable Lasagne sounds really tasty. I typically use full fat cheese, but I use a little less amount of it - I've recently been enjoying Haloumi cheese, and I really like the texture of that - it's similar to a 'squeaky' experience - you'll know what I mean if you've had some, and I'm presuming you have.

Hi I had mushroom stir fry, (carrots, cabbage, onion, bean sprouts & mushrooms), with hot and spicy mixed beans. It was very tasty and hit the spot nicely. :)

These dinners sound so delish! Had one of my faves tonight, Young's cod in sauce, potatoes, broccoli, carrots, cauli, sweetcorn, garden peas and sprout tops, with 2 oz reduced fat cheddar sprinkled over. Looked forward to it since about 2 when I got back from an 8 mile bike ride :o !...xx

Brilliant that you cooked yourself one of your favourites tonight. It does sound really good - a delicious piece of cod with all those lovely vegetables and some cheese on top. Yum! Also great that you anticipated it and looked forward to it - being truely mindful of the food. You deserved it after that 8 mile bike ride - and I hope you enjoyed all that exercise too.

I don't usually have a dessert on the weekdays, but on Friday and Saturday evenings I do. I wasn't going to put the ice-cream with the cake, but my hubby encouraged me otherwise, and I have to say, it tasted quite good together! :-) xx

Hi Zest , your meal looks both colourful and tasty! We had beef stroganoff with brown rice. For dessert my son had some Haagen Dazs cookie and cream ice cream, and I had vanilla yogurt and fresh raspberries (I would have liked the ice-cream, though!!) :o

Hi Zest I feel really unadventurous. It was fish and chips with cider for me again! I left the batter and only had half the chips. Was really good. The cider was devon scrumpy, a 'guest' cider at our local, really enjoyed it :) But I'm feeling I need to redress the balance and have a few extra veg over the weekend now. Your colourful veggies look delish :)

I feel sure you can re-dress the balance and get some tasty veggies in over the remainder of the weekend. Glad you enjoyed your 'Devon Scrumpy' last night - it's years since I've had any of that - but I liked it when I had some previously - and sounds like you didn't overdo it at all with your fish and chips. Hope they tasted good.
