Leek and sweetcorn soup

For a simple (and hopefully nice) bowl of warming soup on a cold day:

3 small or 1 large leek/s

1 small tin of sweetcorn

1/2 white onion

Up to 1 pint of chicken stock (vary according to preferred thickness)

2 tablespoons of olive oil

Salt and pepper

After slicing leeks and onions, gently fry in a non stick pan in the oil for a few minutes until start to soften.

Then add sweetcorn, chicken stock, salt and pepper. After bringing the stock to the boil, soup is then ready to be blended.☺

Good recipe. For extra ease bung everything in a soup maker, press smooth and come back 21 mins later to perfect soup every time. I bought mine in October and have used it weekly since. Makes 4 good size portions

Usually it takes around 10-15 minutes to do including preparation so its pretty quick. I could see why using a soup maker is a good investment when using it weekly.

Would love to hear some ideas☺

I don't own a blender so for me it made sense plus I don't have to stir it which is good because whilst I don't eat processed food anymore I am still a lazy cook.
