Lovely dinner tonight for 500 Calories:

Quorn Chilli - Serves 2

250g Quorn Mince

1/2 red onion

1/2 red pepper

5 mushrooms

210g tin red kidney beans

1 tbsp tomato purée

1/2 carton passata

1/2 stock cube

1/2 tsp Chilli powder

1 tsp cumin

Salt & pepper

100g (Dry weight) basmati rice

Yes it was lovely. Forgot to add 1 tbsp Alpro Simply Plain yoghurt on the top!

Great minds think alike, Sportygirl, since I've just enjoyed the exact same thing.

I'd batch cooked a bean chilli a few weeks back and took one out the freezer last night, adding frozen Quorn mince to it this evening, allowing the contents to simmer away in the pan for 20 minutes.

Glad to see that you've enjoyed success upon reducing weight in the past week, despite not being as mobile as you'd like.

Thanks, feeling more positive this week - haven't needed the codeine for a few days, so hopefully that means my knee is improving.

Being signed off work at the moment I've embraced YouTube fitness work outs so that's replacing the group fitness classes I'm missing out on!
