Celeriac Chips & Nduja butter.....

Cod fillet with Nduja butter (I had to look it up, by Ndula is "a particularly spicy, spreadable pork salami from Italy"). Celeriac chips, roasted butternut squash, broccoli and asparagus.

Early dinner as not eaten anything apart from Greek yogurt and berries at 11am. The fish came ready prepared in a vacuum pack from Tesco and was only 134 cals.

That look so lovely, hope it taste good too. Never tried butternut squash must get some and give it go. Enjoy your meal.

I love butternut - just peel, de-seed and roast in the oven with some olive oil for about 30 - 30 minutes. I'm not eating potatoes, rice, bread, pasta at the moment, so lots and lots of veggies and I'm trying to cook them in a variety of ways. Roasting and griddling are best as it really enhances the flavours.

Thanks I'm going shopping tomorrow so I will pick one up and let you know how I get on. I'm not a big bread and pasta fan so I don't eat it much.

Quite hard work to peel! Make sure you have a very big sharp knife! But think of the calories you're burning as you hack it into chunks!

Hi pineapple27 Looks delicious 😋 love butternut Squash & celeriac never tried it chipped have one in the fridge was going to make soup with it but like your idea so will give it a try when you said chip how did you cook them please .

Cut into chunky chip size, spread over a baking sheet, drizzle over some olive oil. Stick in oven preheated to 200 degrees for about 20 - 30 minutes, turning half way through the cooking time.. Although these look quite anaemia, they were perfect. If they were golden brown, they'd probably be dried out. I quite like them a bit moist inside.

I've bought celeriac before but only made a puree . never thought to roast them in the oven... will definitely give that a go next time I get one !
