Parmesan Chicken with veg sauce.
227 can chopped tomatoes. 1 tbsp pesto, 4 baby courgettes grated, 1 red pepper thinly sliced, 300 g chicken breast fillets cut into thick strips, 40g grated Parmesan, 2 tbsp wholemeal breadcrumbs, 1 tbsp chopped parsley.
Tomatoes and pesto into an oven proof serving dish. Stir in courgettes and pepper. Top with chicken strips and season. Mix Parmesan, breadcrumbs and chopped parsley together and sprinkle over the chicken. 25 mins in oven at 200 centigrade.
