Mediterranean Chicken with Paprika Potatoes

My dinner -500 Calories per portion (serves 4)

500g boneless skinless chicken thighs

2 rashers lean back bacon

Large onion chopped

600g butternut squash diced

150g mushrooms sliced

1 yellow pepper chopped

Small tin sweet corn

500g passata

1 tbsp cornflour

650g Potatoes diced


Garlic powder

Italian herbs


1 tsp oil

Chop all veg except potatoes and sautée for 10 mins.

Place chicken and chopped bacon in an oven proof dish

Sprinkle over garlic powder, herbs and pepper

Pour over passata and bake for 1hr 15mins

With 10 mins to go stir in corn flour dissolved in water

Meanwhile spray diced potatoes with fry light and sprinkle over paprika

Roast for about 50 mins

Serve, Eat!
