As most know by now, I'm a complete nutter considering to trek a 1200 mile trail in the US - so I've started to go on long distance hikes, currently doing 17 miles per hike and a total of around 22 miles a day.
I started out late today so had to pack lunch.
I opted for tsaziki with roasted veg and beef:
200g Greek yoghurt
1/2 cucumber - peeled, grated and water squeezed out
2 garlic cloves
1 large aubergine
2 small courgettes
50g black olives
Salt and pepper to taste
75g beef medallion left over from last night's dinner
448 kcal - plenty of fibre and protein
Really enjoyed my little sit down for lunch 😊
And I'm sure the stink of garlic will ensure I'm left alone for my remaining 10 miles. 😂
