I was looking what I had in my veg rack and cupboards and made a beef sling-it (chuck everything you in).
I softened a chopped onion in a tiny bit of olive oil, added 2 chopped carrots, 2 sticks celery chopped, 1 parsnip in chunks, half swede in chunks, 1 grated courgette, and sweated them for 5 mins, then added a pint of beef stock, a pint of veg stock, a tin of new potatoes, a tin of stewed steak, and a tin of mushy peas and let simmer for an hour. The whole thing is 1138 kcal, I portioned out into 6, 190 kcal per portion. Having it for lunch, very satisfying and yummy 😊 Forgot to take a photo when it was ready but this is what is left.
