Hiya, I have just discover a new low-carb food: Cauliflower Rice. Its 25 calories per 100 grams as opposed to 140 calories per 100 grams of Rice. Its higher in nutrients and fibre and is very tasty. I bought a pre-made, microwave pack called Cauli Rice from Sainsburys at 1.00. There is also a Pilau and Mediterranean version.

Got a cauliflower today, going to try making it for first time this week. Fingers crossed 😀

We have this a fair bit now, and I find dry roasting it for a while before blitzing takes off the bitterness. enjoy :-)

I'm with you gareth0073. Didn't like it at all. Mainly because the smell from the cauliflower on opening the bag put me off. I do however like butternut squash noodles or boodles as they are called in Sainsburys.

I tried it and liked it as a carb alternative - but then found out my partner (who suffers from gout occasionally) should avoid large quantities of cauliflower!  I was not pleased!  I can still use the courgetti and butternut spaghetti though.

That is good but you do not need to buy the pre-packaged stuff, make your own! You can also use/add brocolli stalks, small amount of carrot etc to change the texture/taste and add spices if you want. A knob of butter and mash it up to top your cottage pie too! 

I have not had rice for over 6 weeks now and use this all the time :-) John
