This weather's got me in hibernation mode again...

I just want to snuggle up with hot chocolate (or real chocolate) and not go anywhere, other than the kitchen for comfort food...

This week I've only had 1 lunchtime walk, no evening walks and have noticed a rise in carb cravings (the bad kind, like bread and sugar). A bit of me thinks it's a fluke weather spell that will end soon, therefore it's ok to indulge.

I think I'll go look out a super healthy comfort food recipe for tomorrow...

Think the problem is that the easy carbs are ready to eat, but the complex carbs will take effort to prep and cook, meaning less time with the warm blanket on the sofa...

Hi Cooper27,

I hope you find your super healthy comfort food recipe for tomorrow.  I've had mine tonight, which was my Turkey Moussaka (I absolutely LOVE that meal!!!) - it is so comforting and tasty and yet it is full of very healthy ingredients.  I can recommend it, and it's easy to cook.  It's in the Recipe collation if you fancy trying it, or maybe have a look through those and see if anything else takes your fancy!

Hope you have a better day and also that next week is one that is filled with energy and you feel better generally.

Lowcal :-)

Thanks Lowcal, I'll have a look for the recipe. I've decided to make chicken and apricot stew, I have all ingredients in the flat already.

Here's a link - but I've not mentioned the quantities of ingredients - but hopefully you can work out what you want to add:

I added some spinach too to the one I had tonight, it was really good.

I don't pre-cook the aubergines, I just basically fry the onions and mushrooms, some leeks in a frying pan and ensure the Turkey mince is cooked through, and then put them in a large casserole dish, and layer the aubergines and a couple of tins of tomatoes with some tomato paste, layering it up and finish with some cheese crumbled on top and bake for about 45 minutes to an hour.  Adding the fresh herbs pack in makes such a difference - I got a herb pack from Waitrose that was specifically for use with tomatoes, and it was really good!

Hope you enjoy it, if you do decide to try it.  :-)

It was, I bought years ago, a weight watchers pasta cook book, I did adapt the recipe a bit, Cyrene friache rather than 150 most of white sauce.   It was in a low fat phase in the diet industry

I think we all crave comfort food, I know mine is different to what it used to be!   Hot drinks, well I'm sure "put the kettle on , everything is better with a cuppa", really is about drinks being soothing and hot, and to some sugary tea.

I love coffee myself, herbal tea too, and of course chocolate, Aldi do fab mini bars ( OK the mister Roth ones) in a normal Choc bar, work out at about 150 cals, bring portion controlled helps me.

I love pasta, and am sensitive to normal stuff, so buy, rice or sort pasta, I also love rice, I use a 1/2 portion tho thes days, so many recipes to so stuff with these.

Hope these ideas help

Why don't you pull out of your cupboard a packet of wholemeal pasta, brown rice, or cous cous, make it up/ cook it and toss into the mix any remnants of different coloured veg in fridge. be creative, drizzle with a little olive oil, season with whatever you have to hand, squeeze of lemon on cous cous. Then over next day or so spoon it onto your plate along with your choice of protein like chicken, salmon, omelette or whatever.
