lovely soup

Here is my favourite soup recipe. Even my veg-hating children love it.

Roughly chop one onion, a stick of celery, couple of garlic cloves and fry in olive oil until soft.

Roughly chop 3 courgettes and add to pan. Fry for a minute or two more.

Add a litre of chicken stock and simmer for 20 mins.

Add a pot of hummus - any flavour you fancy

Blend and enjoy!

This looks like a tasty soup, and I have copied and pasted it into my recipe file for future use. I would never have considered blending with hummus before, but that sounds like a great idea!

I have tried this soup without hummus and it is yummy. Never thought of adding hummus will try to make it Thanks for encouraging me as I always kept saying I must make hummus but now I will just do so.
