Evening Meal - Very Tasty!

Hi everyone,

I tried out a new 'recipe' tonight for my evening meal - I took a frozen soup from Iceland called Tom Kha Soup (described as a 'Thai style spicy and sour soup with chicken breast, oriental vegetables, coconut milk and flavoured with fragrant lime leaves and lemon grass - £1.50), and defrosted it in the microwave for 8 minutes as per instructions.

In the meantime I put a pan of basmati wholegrain brown rice on to cook (60g per person) for approx 25 minutes.

In a large frying pan I fried one white onion and 2 cloves of garlic in olive oil for a few minutes, and then added some frozen prawns, 2 small handfuls of frozen peas, a third of a bag of Kale (just 33p worth), and some chopped chillies into the frying pan and gently fried these - then when the soup finished its 8 minutes in the microwave I added it to the frying pan with the other ingredients, and simmered it on a lowish heat for a further 10 to 15 minutes, until the rice was ready.

This served 2 people, and the photo shows my plate of food. Yummy!

It was delicious!!! I'll definitely do that again.

Sounds good, but is it very spicy? I can't handle too much spice in my diet.

Hi Activity,

I think you should definitely leave the chillies out if you don't like it spicy. I've tried the soup on its own, and found it very tasty as a soup by itself, but I do like some spice in my food - so I'm not sure if you could tolerate it - as you don't like too much spice in your diet.

For people who like spicy food, I think it would be a good choice.

I had pork chop with crispy leek and mushrooms, roasted butternut squash, courgettes and red cabbage :)

Your meal sounds delicious - I love roasted butternut squash in particular, and you have a lovely range of delicious veggies there. Lovely combination with pork chop. Glad I've already eaten, otherwise I'd be feeling hungry!

I'll forgive you, just this once mind :)

I'm picking my bike up tomorrow. It feels as if I've been waiting forever and I'm beside myself with excitement. The only downside is our horrendous weather - gale force winds and torrential rain. The roads are completely awash, so I don't think I shall be going for any test rides for a few days, Thank goodness I've got the stand that converts it into an exercise bike, or I'd be worried about the Around the World trip :)

I think it's great that you can use your new bike on the inside stand - having your own exercise bike in the house, but with the option to go out when the weather improves - that's the best of both worlds, and it's great that you'll be ready to pound away the Kms for the Around the World trip - exciting adventures await us! :-)

Oh, that looks and sound delicious, Lowcal 😋

We had home made pizza, I rill my dough VERY thin, and have veg , olives horrendously thin chorizo ( a little) and a light sprinkle of mozzarella. Didn't count the calories but I know I stayed "within".

Meant to go running, but cut myself while cooking and it took ages to stop bleeding , so postponed my run until tomorrow - permitting the permanent rain decides to slow to a drizzle 😉

I have often wondered about making home made pizza - your pizza sounds great. Really tasty.

Sorry to hear you cut yourself whilst cooking. Glad it's stopped bleeding now.

Thank you! That's my cat, Bunny (she came to us with that name when we adopted her from a no kill shelter).

I had lunch at 12 noon today. Will try the soup in a few days.

Bunny is beautiful.

Do let me know what you think of the soup, and I really hope you like it and it's not too spicy for you - there are other flavours available - maybe a chicken and sweetcorn soup might make a good blend for an evening meal with some vegetables for example, and less spicy.

I was looking at the ingredients on the Tom Kha Soup, and it does contain chillies, so I probably went a bit overboard adding extra chillies. :-)

I had this meal for my evening meal tonight. For lunch today I had a tomato soup with 1 and a half pieces of wholegrain toast with some peanut butter on them. That was tasty too.

Hi Tewson,

It's mainly because I enjoyed the soup the other day, and thought it might go really well with prawns - so then I ended up adding a few more things, and I must say I was pleased with the outcome, and will definitely have it again sometime soon. It was really good.

Calorie wise there are 279 calories in the soup - so for 2 people that means just 139.5 per person from the soup. The veg inside the soup are mange tout, carrots, bamboo shoots, shitake mushrooms and cooked diced chicken breast - so it contains quite a lot in itself. I was impressed!

It's a shame I'm suffering with a dicky stomach at the moment and not eaten much today. It does look nice though and I will try similar later in the week.

It's the sort of cooking I enjoy too, making the most of what's available and coming up with something so nice, is the sign of a good cook. :)

Glad to hear your daughter has managed to get off safely to Uni, and I can imagine the house is feeling a little empty without her.

Great to hear you'll be weighing in with us tomorrow - I am a bit disorientated regarding days of the week right now - but I will definitely post the Monday group weigh-in thread tomorrow, so all is well. :-)

I'm just making some parsnip and garlic soup, as I decided just to roast them together and then add to some vegetable stock - the whole house smells quite pungent now, but surprisingly not unpleasant...!!! It seems a bit 'thin' as I used 5 pints of stock, so I'm thinking of cooking some lentils and then blending them into it to thicken it. I think I'll do that now... Still got a while before lunch, so time to cook some lentils.

Look forward to catching up with you at the weigh-in tomorrow. Hopefully it won't be as bad as we're anticipating... :-)

Ooh ! You do have the lovliest sounding ideas ! I made soup recently and added a tin of cooked green lentils which came out very tasty. I want parsnips,and garlic now and make this !!

Hi Libby,

Actually that soup was very tasty for lunch today. I used green speckled lentils, and they were really good. The only thing is that the colour of that soup (because of using those lentils) comes out grey - so not the most appetising colour for soup, but I sprinkled some spicy grated cheese on top, and it made it look much better, and tasted great too! :-)

I've managed to get 6 portions of soup out of what I made today, so have frozen 2 containers (each container serving 2) for future meals. I think pea and mint soup might be my next venture, but I think I need a rest from soup making till next weekend...!

The lentils definitely helped the texture and added some nutrients too, so really good.

My aim for 2016 is that now I'm getting closer to target weight I'm starting to look around for some different, healthy recipe ideas to try out.

We had homemade baked beans with a poached egg and a slice of rye sourdough for dinner - yummy !!

If you like quinoa Lowcal, I've had this salad a few times, and it's delicious. The dressing is a bit calorific, but it's just as tasty without the dressing as well. I adapted it yesterday and had it without the nuts and substituted some cooked chicken.

I love the recipe idea you've shared - Mango, Cucumber & Hazelnut Salad made with quinoa - it looks so delicious, and I will definitely be trying it out when I next spot a Mango. Your idea to substitute some cooked chicken for the nuts sounds like a good idea - I haven't got any hazelnuts currently, but I do often have cooked chicken.

Sounds nice low cal. For me the soup would be 13.1/2 syns, but the rice and veg is allowed. I'll have a look when I'm next in Iceland- if it serves 2, I could manage 7 syns, and it does look delicious - thanks !

The soup says on the container that it serves one person, but I find it is a large portion of soup for one - so I am considering trying half a portion of the soup next time I have it.

Yeah that green colour is a pity. The first one I did, I had a tin of red lentils, but I couldn't find them in sainsburys. Sounds like they still taste ok tho - I bought some tiny pasta stars which might improve the look ....like water lilies on a pond 😃
