So I thought I would share what was on Trafford's menu tonight and here I have prepared a trio of turkey mince filled little gem lettuce leaves with a carrot and swede mash on the bottom. I like my food spicy so I added some hot pepper sauce on top of each one :-) delightful

These were very tasty and very filling, packed full of goodness.

That looks nice. Tonight it will be vegetarian chillie and rice.

Umm that sounds nice too. I like chilli and rice can't imaging what a vegi chilli tastes like though as I do like my meat.

Also cooking veggie chili right now, I use quorn mince and if I can be patient enough to let it simmer and bubble slowly, the mince soaks up all the flavours of the tomatoes spices and garlic. Having mine with a baked sweet potato, yum ☀️

Now that does sound really nice Fran. Love baked sweet potato which will go so nicely with your veggie chilli :-)

I like my meat too, but I love kidney bean fajitas as a quick spicy lunch.

I'm thinking I enjoy my food too much.

;-) it really was nice I have made this before but not with the baby gem leaves and it went down a treat and low in cals which is just what I need this week.

I have so much salad in my fridge this week so I will have to incorporate all of this into some of my dishes this week and this was the first dish :-)

It really was moreless, keeping it healthy and low in cals this week as I want a successful weigh in. Got to get those 2 lbs off this body of mine.

Love fish pie, not had that in a long time. I would top this with a sweet potato mash or you could use sweet potato mixed with carrot and swede. Either way it sounds delish :-)

Same here, there is so much to chose from and just think I only knew about potatoes before and had a mound of em on my plate and used to be stuffed to the brim with em LOL :-)

Hi Trafford,

That looks really tasty! Festive too, with the turkey.

I'm having some trout fillet with vegetables and some chipped potatoes baked in the oven. Looking forward to having that later.

Yummy trout ooh now your just teasing me with that dish Lowcal, sounds really nice and healthy too.

I will be having fish on Wed and Friday maybe even Thurs either way I love fish :-)

Fish for me tonight too. I've got salmon fillets which I'll pan-fry but semi-wiping the oil off the pan first so it's almost dry. Then there will be avocado, peas and oven cooked beetroot to go with. I'll do baby potatoes for the carb part but only 3 or 4 for me, and a larger portion for my boyfriend who also gets a danish for dessert (he has the opposite sort of weight problem to me and needs to make sure his calories are enough!) :)

Yummy fish again on the menu. Love salmon fillets and your way of cooking them sounds really nice. The whole dish sounds really nice :-)

Your boyfriend is the lucky one having the opposite sort of weight problem, it must be nice to eat what you want and stay trim :-)

Thanks! He doesn't see it that way - but I guess the grass is always greener! Hope you enjoyed your dinner. I love scooping things in lettuce leaves too. I prepare a bowl of the filling (normally some sort of stir fry with quorn, usually with a small pot of rice on the side, but not as much as for a usual meal) and another bowl with gem lettuce leaves, and then work my way through it all scooping and munching til all the lettuce leaves are gone :)

That sounds nice too. I think I will start using these little gems more often they have a nice bite to them and there nice and lite and yes the meal was very nice thank you : )

All the dishes mentioned for tonight's meals are really my kinda food chilli, trout and fish pie made with butter nut squash mash all very delicious meals. It's good to be adventurous in the kitchen it keeps things interesting. Since I began my journey I have been introduced to whole new world of foods I would never have thought of using. All healthy all fresh :-)

Looks yummy, I've never tried turkey mince do like spicy, did you make the hot pepper sauce ?

Turkey mince is the one I tend to go for these days I have swapped it for the good old beef which I still enjoy but only every now and again. I love spice and no I don't make the hot pepper sauce it's Dunn's River out of the bottle and it goes really well with mince. I would have used dried chilli flakes, but I ran out :-)

The turkey mince is low in calories and it only has 7% fat in the whole thing and I portion this out into 4 servings so it is very low in everything. Give it a try flossie you might like it :-)

Good for you flossie I bet you'll like it :-) and you can dry fry the mince. I don't add any oil to the pan just put it in a non stick one. Don't like adding oil where it's not needed x

they look nice, we had salmon with lemon and black pepper, new potato, broccoli cauliflower, peas and carrot.The lemon juice made it really nice and was filling so I measured and calorie counted all veg but there was good variety.

Glad to hear you had fish tonight and your combination with the salmon lemon, black pepper, new potato and all those veg sounds really yummy. Your all making want fish tomorrow now, but I portioned out the turkey mince and still have that for tomorrow, but will have it with some whole wheat pasta and a side salad :-)
