Hi tequila,
I'd just say two things - go for a nice steady weight loss - averaging out at 1 - 2 lbs a week once you're past the first week or two when most people lose weight a bit faster due to fluid loss.
And remember there are lots of other bits of your body that you can exercise other than your knees and lots of ways of doing that too, so dare to be a bit inventive and creative to find solutions that work for you.
Good luck with your weight loss journey.
