Been on a 500 calorie diet for a couple of weeks now. Although it's not recommended for anyone to only eat 500 calories I've found a lots of delicious and filling meals on this journey.

I don't bother counting calories, I just be careful to eat low carb and my BMI is 21

Why are you doing it for? What happens when you stop eating 500 calories? The best low calorie diet is fasting, skipping one meal a day and building up from there. 500 calories a day is not sustainable and I would worry that you'll pile weight back on when you end it. Read about the health benefits of intermittent fasting, it's not just about losing weight, and it is a sustainable way of eating but do read about it first. Michael Moseley's 5:2 diet is a great introduction
