Though my dinner was pretty photo-worthy last night, it was really delicious too! Chicken fajitas with regular salad, mango and cucumber salad, sauerkraut (can sometimes pretend this is cheese) and pickled onions.
It's quite a deep bowl of food, although from this angle I feel like I could pretend it's a small plate 😉

That looks delicious! Do you make your own pickled onions? I love them, but have never made my own.
Sorry, it's taken me a few days to reply! I didn't make these, I bought them in Asda, but I've made some quick pickled onions before and they're really easy!
I do thin slices of carrot, cucumber and red onion and then add a couple if tablespoons of apple cider vinegar. I eat half on one day (after letting it stew for about an hour), and the other half the next. The next day is better
