This is what I had for dinner tonight. It’s perfect for the cold weather nights and also a quick leftover for a lunch. It’s gluten free. The macaroni had cheddar cheese (sharp/mild and triple), cottage cheese, 2% milk and gluten free rotini. For dessert, we had ice cream. The entire meal has 76 carbs. when you have ice cream. Everything was delicious.

Yes, we always try to have tons of different types of pastas in the house that are gluten free and then we can have leftovers anytime at the last minute. The leftovers are always wonderful after being put in the refrigerator or freezer for a few days. This helps blend the flavors together very nicely.
We try to have different flavors of ice cream now and then when we have Mac. and Cheese. It depends on what we have in the house and what we add to the Mac and Cheese, too.
