Carrot and lentil soup spicy soup

Hi everyone,

This is what I made for tonight as carrots are in season and I fancied a nice hearty soup.

I cooked some baby carrots with a diced onion at the same time I cooked some red lentils and a little quinoa and then when it was all cooked I let it cool before blending it and adding cayenne pepper cumin coriander a pinch of salt back pepper yeast extract and some soy single cream and brought to back to the boil very gently.

I put a little fresh chopped parsley on top with some little chunks of potato diced in its skin sautéed in a little olive oil. This is instead of croutons and I really like crispy potatoes so a great alternative thats also quick and easy.

October is definitely soup weather here in the UK and this was nice and warming and I've enough left for another day.

Hi Hidden ,

Your soup sounds and looks really wonderful. I like having any soup that has baby carrots added to them. It always adds an extra flavor to the soups. :-)

The soup looks really good, and what a great idea to use crispy potatoes instead of croutons. I might just try that next time, thank you. Today I ate veggie haggis with mashed potatoes and cabbage and gravy today, a warming meal for a cold day 😊

Thank you HungryHufflepuff sometimes I lightly sauté chick peas instead of croutons and that’s works really well.

Your veggie haggis sounds wonderful to me especially with cabbage and mash with gravy, perfect for keeping the cold out. 😊

Oh, that looks great! We’ve had a great ham chowder yesterday, also with guests… eating with guests that is, they didn’t go into the chowder. 😉

Hey thanks CBDB your ham chowder sounds a really good meal to have with friends and I’m sure that you all enjoyed it as Ham is full of flavour and chowder is an extra thick soup. So perfect for the time of year. 😊

Definitely. We use a slow cooker for the chowder, and the gorgeous smell just fills the house for the day! 🤤😋🍲
