Gluten free Apple crumble with quinoa flour.

Hi everyone,

I bought some local Bramley apples and sliced 4 with chia seeds. Chia seeds absorb 10x their volume in water so make the apple really nice and thick and fruity.

Crumble recipe: 75g ground quinoa 150g plain gluten free flour 110g butter 50g Demerara sugar mixed thoroughly and then spread over the fruit with some flaked almonds on top before baking for approx 30mins @175C

Bramley apples are my favourite so local and in season they’re at their best. I really like adding chia seeds to cooked/stewed fruits as they make it even thicker and chia seeds are very healthy. As is quinoa as quinoa is a complete food so it’s great to include them when we can.

I had this with some custard and enjoyed it. It’s definitely autumn food…🍁

That sounds good Jerry, I have some chia seeds so I will try this. Loads of Bramley apples and running out of ideas. So much cooked apple in freezers and three different chutneys, one more to do next week. Have got herbs potted on and seeds sown for a winter supply.

Thanks Alice, chia seeds make stewed fruit really nice as it’s thicker more like a compote.

You have been industrious with your frozen fruit and thinking of winter herbs you will reap the benefits of all your hard work which I know that you enjoy.

You're welcome! Have you tried doing a baked apple for dessert? We add raisins and some cinnamon after cutting the apple open at the top to put everything inside before getting it warmed up. :-)

Apple crumble is so good. I cheat and buy the Alpro ready made custard, which is free from dairy and gluten. It tastes really good and I know several non-vegans who prefer this over dairy custard. It’s not at all beany or grainy. 🥧

Hi HungryHufflepuff I had it with Alpro custard nice and cold from the fridge so agree that’s it’s really good custard. 😊

What's the point of doing so much good and undoing it all with added refined sugar?
