I baked these earlier as I've a vegan neighbour and friend calling around later so I made these plant based and gluten free flap jacks as an experiment. As I don't eat oats so buckwheat and quinoa flakes are a great alternative for flap jacks.
Here's the recipe, 250g buckwheat flakes 175g mixed dried fruit 165g Pure vegan butter 40g brown sugar 2 table spoons golden syrup, 50ml vegan single cream and 1/2 tea spoon cinnamon.
Method, melt the pure in a saucepan with the sugar and the syrup until the sugar dissolves then add the buckwheat flakes the dried fruit and then the cream and cinnamon before spreading in a greased baking tray cover with more buckwheat flakes and bake for approx 20/25 mins then leave to cool thoroughly before cutting and sampling.
