Gluten free vegetarian scotch eggs πŸ₯š

Hi everyone,

I made these today I meant to make 6 but only had enough mix for 5 and ones already disappeared....

I boiled 6 large free range eggs and left them to cool.

For the coating I cooked quinoa and red lentils (about 500g after boiling) let them cool and mixed with 2 slices of brown gluten free bread 1 large egg 1 teaspoon diced parsley black pepper a little salt and enough milk to make a nice dough.

I put olive oil on my hands and pressed the mix around the eggs and baked for about 30 mins on 150C until golden on the outside, quinoa and lentils are very healthy and I’m having one with a salad and new potatoes for dinner tonight. You can see the curls of the cooked quinoa and I like that.

They look delicious Jerry and the coating is almost like a stuffing mix but much healthier. Isn't it great how versatile Quinoa is.

Apart from the breadcrumbs (which you can substitute out with eg., coconut flour), normal Scotch eggs are also gluten-free :)

Just sayin'.

They usually add rusk from wheat to sausage meat but bread crumbs still eliminates shop bought ones as OK for me.

Ah, that's true. The cheap ones are probably more rusk than meat.

Another good reason to avoid the fake food in the supermarkets and make one's own scotch eggs from scratch, in any case!
