Gluten free apple tart

Hi everyone,

I made this apple tart with the base made with cooked wild rice mixed with an egg and then blind baked it for about 15 mins before I covered 3 Bramley apples lightly stewed with chia seeds and a little brown sugar.

I put flaked almonds on top and baked for another 20 mins and am looking forward to sampling some later.

This is Activity2004 Leah's gluten free pie crust idea which I've been looking forward to trying.

Just made this today for a friend who needs gluten free. The proof will be in the pudding tomorrow!

Cool! Just wild rice stuck together with an egg? Or is it wild rice flour? I cant see from the pictures but the top looks nice. When apples are in season we always make a pie or crumble as the apples are just lying everywhere begging to be made into something. I'll definitely try a rice base! Could even do a rice pudding underneath with milk and egg and top with apples. Mmm... I'm hungry now.

Hey thanks and its cooked wild rice with just an egg to bind it. I also make quiche with mashed potato as a base instead of pastry as I'm a coeliac and thats really nice and easy,Here's a couple of variations please see:

Now I also love rice puddings so some great ideas here. 🌈😊

Oh I like the sound of spud pastry on a quiche!! 🤤I love quiche and always leave most of the soggy pastry behind except that I don't I eat as much a s I can cos I was raised not to waste food. Which is why I never buy quiche. My mom makes the best Christmas pudding with parsnips potatoes and carrots I think it is the lightest loveliest pudding. And I make a really nice meat loaf and my own sausages with potatoes and parsnips grrated on the muddle sized grater bit. Great in burgers too. Anything that needs a binder. And I just don't like squishing egg around in the bowl with meat so I messed around one day and it was the best idea! What do you do for the potatoes to make it a pastry case? Do you eggy it up and bake it blind first?

in reply to

Hi I just mash the potato and blind bake it to make the crust slightly crispy while I make the quiche mix up then just pour it on top and back in the oven. The potato cuts well when cold so you can have slices for picnics.

Now I love Christmas pud so nice one and your meat pie sounds really nice. 😊

Why not make a crustless quiche, a frittata, or a Spanish tortilla? There is no need to bother with a crust at all.
