Carrot and coriander soup, πŸ₯•

Hi everyone,

I bought some lovely local baby carrots so made a soup with carrots onion coriander a little salt black pepper and ginger and cooked lightly in a little water then I blended it all and added a tin of coconut milk and heated gently and had with some freshly baked gluten free bread and enjoyed it as it was a nice thick soup. This is gluten free plant based easy to make and wholesome.

Wow, your soup looks really great. I think the coriander and ginger will have added such great flavours - oooh, and coconut milk too - that's really great soup, and I bet your freshly baked gluten free bread was delicious too. Yum!

Oh lovely, we still have small carrots and parsnips in the garden. Coconut milk in cupboard so will try this.

We had turkey (sorry) veg and noodle soup tonight . Best thing about Autumn and Winter is lots of super soups. Still have peppers and chillies producing in the greenhouse, all grown from seeds saved from supermarket veg. We shall have new potatoes for Christmas lunch .... hopefully the plants look good. Kale just coming to it's best. Lockdown has kept us busy.

Thanks and nice one having carrots and parsnips in the garden. Your turkey and noodle soup sounds really good and wholesome to me so please don’t apologise as I’m a coeliac so have to avoid gluten and I choose a vegetarian whole food diet but respect others choices.

That sounds lovely Jerry, you have just reminded me that I have some fresh ginger in the fridge that I had forgotten about 😁 You can't beat homemade soup, especially with your wonderful GF bread

One of our favourite soups is what we call 'bottom of the fridge soup' literally whatever is a bit limp in the salad drawer goes in with veg stock made from the water leftover when cooking vegetables. Add a tin of tomatoes or baked beans and warm crusty bread and you have a cheap and nutritious meal. Why people complain that they can't feed their families puzzles us, the most healthy filling food is the cheapest!!

Waste not want not comes to mind with your bottom of the fridge soup. 😊

I am glad you added the bread to go with the soup. Nice job.

Our son is visiting for a month. He is vegan. We are used to vegetarian but vegan brings a whole new interesting dimension.

We have been having fun with it. He can tolerate gluten so we do a lot of sourdough bread to go with things.

Tonight is beet, rice, tofu, lentil loaf. The recipe looks good so we will see.

Thanks Dave vegan is a big step from vegetarian I'm not vegan I just like keeping things vegan if I can.
