Hello everyone.

I haven't been on here for a very long time. Hows everyone doing? I would love to hear what healthy type's of dishes you all do that's also quick and easy? It's been over a month for me staying indoor's trying to stay safe. My daughter does my food shopping. Its quite a scary world right now but staying positive and cheerful catching up on some reading and just taking things a little easy.

I've become a big fan of frozen Mediterranean veg mixes - I roast them as a side dish or use them in ratatouille/Bolognese, or fry them up to add to pasta with pesto.

It's also coming up for stir fry season, which is also quick and easy.
