Breakfast casserole.

Good morning everyone,

With all these posts about breakfast and reading some of the delicious responses this morning I made a breakfast casserole using some left over roasted potatoes from last nights dinner (this reduces the resistant starch) with organic mushrooms and baby plum tomatoes with 2 eggs beaten with full fat goats milk black pepper and celery salt baked for approx 20 mins. Being gluten free I think this makes a great breakfast

I love a nice brekky and this hit the mark the photo isn't very good but a selfie would be even worse this time in the morning LOL. πŸŽƒ

I had smoked salmon and scrambled eggs for breakfast this morning which I enjoyed and an interview at 1pm this afternoon as well.
