Cheesy egg bake with onions mushrooms and tomatoes πŸ…

Hi everyone,

Here's a simple dish that I really like and make lots of variations of, today I used strong cheddar cheese with 2 free range eggs onion garlic baby plum tomatoes with sliced organic mushrooms on top, I really like mushrooms crispy on the outside I seasoned with black pepper and a little parsley. I baked it until is was going golden on top. I had it with a big salad and it went down a treat.

I also love this when its cold so it's great for away from home and as its gluten free its a great option. 😊

We have have salad today, hubby likes it just with potatoes so I will try this and save some for tomorrow, as Mondays are always a rush. Thank you. x

Looks like a baked omelette πŸ€” Good idea. My version of this is made in a pan on the hob. Adding the cheese into the egg mix before cooking makes it extra yummy. I have it with a salad and some homemade mustard vinaigrette. It's my favourite lunch.

Hi MTCee it is a baked omelette, I like cooking them this way. But do make omelettes like you if I just want one portion. 😊

Btw I made a quiche a few days ago using your idea of mashed potato as a base and it worked out great. I used a combination of sweet and white potatoes and added some whole grain mustard and a bit of cheddar cheese to the mash. It was very yummy. I think next time I make it, I'll make the base a bit thinner though. I thought I might need it to be relatively thick so that it would hold together, but I think I can get away with a thinner base because it holds together quite well. Thanks for the suggestion. πŸ‘

Thank you Hidden , the calories would depend on a few things and I don’t know because I don’t count calories and I judge the quantity so I’m sorry but I’m hopeless with calories...😊

Hi

I'm also hopeless with Calories ! I began using the calorie counter and look at calories in packets, I've got the gist of what is high and low . Using the steamer is gear for vedge. Using a wok but being careful about oil and sauces great for vedge. I've changed to whole meal rice, noodles and pasta and got used to the taste. I bought smaller bowls !

Hi Cheeseandwine , I think buying smaller bowls is a very good idea and coupled with healthy eating choices is a great way of staying trim. 😊
